- Provide 1 cup of basmati rice(washed and soaked for 1/2 hour in water).
- Get 2 1/2 cup of water for boiling rice.

- Get 4 of cardamom pods.
- Get 2 tbsp of ghee.
- Get 4-5 strands of saffron(mix it in a tbsp of milk and keep aside).
- Take 2 pinch of orange food colour (optional).
- Provide 2 tbsp of grated coconut.
- Get 1/4 tsp of salt.
- Provide 1 cup of milk.
- Prepare 1/4 cup of water for making syrup.
- You need 1/2 cup of sugar.
- Prepare of Few drops of rose water or kewra water.
- Take 2 tbsp of chopped cashews.
- You need 2 tbsp of chopped almonds.
- Get 2 tbsp of raisins.
Steps to make Sweet Saffron Rice:
- Boil 2 1/2 cup water in a thick bottom pan, add salt,2 cloves, 2 cardamom, 1 bay leaf, saffron, food colour and soaked rice. Give it a nice stir and cook till 3/4th done. Remove excess water and spread rice in a big plate..
- Now mix 1 cup of milk,1/4 cup water and 1/2 cup sugar in a pan, give it a boil and keep this syrup aside..
- Heat tawa on medium flame. Place a non stick pan or a heavy bottom pan over it..
- Heat ghee, add cloves, cardamom, bay leaf and dry fruits and grated coconut, saute for few seconds..
- Now add milk and sugar syrup, give it a nice mix..
- Add cooked rice, remember we do not want to break rice grains so, mix it gently..
- Cover it with a lid and cook till all the moisture evaporates and rice also gets cooked properly..
- Garnish with some nuts and serve hot..
